Weekend Update

Brandon and I spent this last weekend in Yoakum. Our days included family, friends, Mi Tierra, two-steppin', good music, and home cooked meals from our moms' kitchens. Here's a few pictures from Saturday night. We don't get to see our friends nearly enough, so this night was much needed :)

Michelle and I also made this strawberry-coconut cake, which just happens to be her favorite (strawberry) and my favorite (coconut) put together. Shell found the recipe on Pinterest, of course!

The cake is super moist, and the icing is amazing!
I hope everyone had a great weekend :)

Tonight's Dinner

This morning I came across a recipe on Pinterest and had to try it. Here's what we had for dinner:

Crock Pot Chicken Tacos- Click HERE for recipe.

It was SUPER easy to make, and tasted delicious! If you don't have energy to cook at the end of your day (not the case for me, but I'm just saying), this is perfect. I've made a few Crock Pot recipes that require a lot of "prep work" like cutting veggies, peeling potatoes, and even cooking the meat on the stove BEFORE you put it in the Crock Pot. This recipe requires none of that. Put the ingredients in the Crock Pot in the morning, and eat dinner in the evening when it's done. Enjoy!

--The recipe makes a lot! The original blogger suggests several other dishes to make with the leftovers, or you can use fewer chicken breasts. We will be freezing part of our leftovers to enjoy later.

Happy Cooking!

Week of Thanks

As I sit in our house I often find myself thinking "If I could just have new curtains for the guest room, bedroom furniture, that piece of wall art I saw at Hobby Lobby, a new dining room set,..." Then when I get dressed to go somewhere, I begin to wish for things like a new purse, a new watch, a new wardrobe all together. Why is it so easy to get caught up in the material things of this world? This week, in the spirit of Thanksgiving, I will strive to think each day of the many blessings in my life. When I catch myself wanting something, I will change my mindset and think of something I am thankful for. This will take practice, and prayer. But I know I will be a much happier person :)

I found this on Pinterest, and it seemed perfect for this week.
